At the peak of an OC summer, there doesn’t seem to be much difference between the daily weather and the sweltering heat of a Bikram yoga class! Though we wait all winter long for the glow of that summer sun, too much heat can leave us feeling aggravated, exhausted, and out of balance. Rather than reaching for the same old kale salad you always make or overindulging in fro-yo this summer, try this slightly sweet, hydrating, nutrient-dense Cucumber Mango Salad with Blood Orange Vinaigrette as a cooling side dish or entrée. This delicious one-bowl salad is a staple in my house because it has simple ingredients that are readily available in the organic section and can easily be made GMO-free and vegan. Even the staunchest of carnivores won’t be able to resist the crisp cucumber, aromatic cilantro, and juicy mango tossed in a fresh citrus spritz! So dust off your spiral slicer you bought to make the zucchini noodles you saw on Pinterest and breathe some new life into your summer menu!
